Lemon Garlic Chicken

This is a delicious and quick recipe, which is perfect for a busy weekday or weeknight meal. It requires a few ingredients and takes just about 20 minutes to make including the cooking time. The lemon and garlic are the main flavoring ingredients and they enhance the dish. A light meal which can be paired with a side salad or steamed vegetables, to make a complete meal. Our family (the meat eater wing) love this recipe and it has become a favorite.

This is one meal where I don't have to ask the kids to finish their food. It gets eaten really quickly. So without further ado, here is how you make it.



Also here is the link to the youtube video with detailed instructions. These will help those cooks who  who may be new to cooking chicken and have questions about handling chicken and determining when is it cooked completely (without making it rubbery), like I did several years ago.


Ingredients
For the chicken
1 pound of chicken (2 chicken breasts)
1/4 cup of all purpose flour
1/2 tsp black pepper powder
1 tsp salt
1 tbsp oil

For the sauce
1 heaped tsp all purpose flour
2 large garlic cloves (about 1 tsp grated garlic)
1.5 cups broth (chicken or vegetable) - can also use water if you don't have broth
1.5 tsp butter
2 tsp lemon juice/ half of a large lemon
lemon zest


Method
If frozen, thaw the chicken breasts. Then slice the chicken into two pieces, horizontally along the surface of the chicken. You will have 4 thinner slices of chicken after this. Pound the thicker part of the chicken if needed, so that the chicken breast is uniform in thickness and cooks uniformly.

In a plate, mix the all purpose flour, black pepper powder and salt so that the flour is evenly seasoned. Heat the oil in a skillet and once it is hot, dredge each piece of the chicken in the seasoned flour and place in the hot skillet. Discard the remaining all purpose flour mixture.

Cook the chicken on each side for 2-4 mins till the chicken is browned. To check if the chicken is cooked, use an instant meat thermometer and insert it into the thickest part of the chicken breast. If the temperature is greater than 165F (74 C), the chicken is cooked. Remove it onto a plate and prepare the sauce.

Add 1 tsp of all purpose flour to the hot skillet, and half of the butter and roast it for a minute. Scrape any of the browned chicken bits. Next, add the garlic and cook it for a min. Then add the broth to mix, and mix well. Then add the lemon juice and lemon zest. Let the sauce cook and thicken and then finish the sauce with the rest of the butter which will give it a nice sheen. Add the cooked chicken breasts back to the pan and let them heat through. Garnish with lemon slices and serve hot.



Tips
Thaw the chicken in the fridge. Do not keep it out on the counter to thaw. Best way is to thaw it overnight. You can skip the butter if you want this to be a lighter meal. I have used very little oil and butter and you can also choose to increase the quantities to make it a richer sauce.  Using a thermometer ensures that the chicken is well cooked and also prevents over cooking of the chicken breast. This is an easy way to ensure that the chicken breast does not become chewy or rubbery.
If you line the cutting surface with parchment paper, it makes cleanup quick and easy. Make sure to wash your hands and clean any surface which has been in contact with raw chicken to prevent cross contamination.

Lemon Rice - Tangy and Spicy

Rice is an integral part of every meal in India and there are many recipes to spice up the rice and make it more interesting. Right from the rich biryani preparations to the every day lemon rice, tamarind rice and tomato rice. These are just a few examples of the vast number of rice dishes that can be found in India. As one travels through India and moves south, one will notice that the prevalance of rice increases.  I really enjoy the tangy preparations of rice like lemon and tamarind rice. It was only after I tasted the lemon rice made by a friend that I realised that if the lemon juice is cooked prior to adding the rice, the end product is significantly better. So thanks to her, I now know how to make this recipe so that the end result has an authentic taste.



Ingredients
1/8 tsp mustard
pinch of hing/asafoetida
1/8 tsp turmeric
1 tsp urad dal
1 tsp chana dal
5-7 curry leaves
2-3 tbsp peanuts
1-2 green chillies to taste, slit lengthwise (if you don't have green chillies, use dried red chillies - this is what I used in this recipe)
1/4 cup lemon juice
salt to taste
1 cup rice, cooked



Method
Heat the oil and add the mustard seeds. Once the mustard seeds starts to crackle, add the hing, urad dal, chana dal. Cook the dals till lightly browned and then add the curry leaves, green chillies and peanuts. Stir and cook for a minute and then add the lemon juice. Add a little salt and cook this mixture till the lemon juice starts to boil and then turn off the heat. Add a little lemon mixture to the rice and mix well. Add more as needed till the rice gets the right amount of tanginess. Adjust the salt as needed.



Tips
You can cook the lemon mixture and store it in the fridge for upto two weeks, without it getting spoilt. This is a wonderful way to spice up leftover rice and make a quick meal. Add more lemon mix to the rice if you want a sour and tangy taste. Lemon rice is a preparation that will stay fresh for about a day or so without refrigeration and is a common food packed during travel. To cook the rice in the pressure cooker use twice the amount of water compared to the rice and cook for 1 whistle or if using the Instant Pot use the rice mode, or 5 minutes manual, high pressure mode and let the pressure fall naturally.

Celebrating My 100th Post! A Drink and a Few Tips

I can't believe that I am at my 100th post! And what is a better than to celebrating it with a celebration drink recipe and also, providing a lot of tips and tricks that  I have come to rely on a daily basis.

I generally spend about 30-45 minutes on daily meals and try very hard to not spend more time. Family, work, and chores have higher priorities and my goal is to make healthy, tasty and wholesome meals in the minimum time possible. So I am sharing a few tips that come in handy and make the cooking process much easier. So, if you a beginner, don't despair, things just get easier.


If you are a beginner or just want to reduce time in the kitchen here are a few tips that will come handy.

Tip 1: Do preparation work over the weekend or when you have some free time. This includes things like chopping different vegetables and storing them in ziploc bags or boxes. Vegetables that last well in the fridge for 3-4 days are onions, cabbage, carrot, cauliflower, celery, cucumber.

Tip 2: You can knead dough and portion it out into appropriate quantities and then freeze it in an airtight container. It freezes beautifully. Then, thaw it during the day or overnight in the fridge, on the day you want to use it. Then prepare fresh rotis as needed.

Tip 3: If you don't want to roll out a lot of rotis on a daily basis, roll out the amount you need for 3-4 days and refrigerate. When you want to reheat, wrap it in a damp towel and then microwave for about 30 seconds. Serve the rotis hot, when they are soft. Try to minimize the number of times you re-heat for the freshest taste.

Tip 4: Plan ahead. Decide on a few menu options that you can prepare during the week. Then, make sure you buy the necessary items when you do your weekly grocery run. When you know what you are going to prepare that week, it's easier. You can decide on what kind of preparations you can do to facilitate the daily task.

Tip 5: A complete meal needs to have components like carbohydrates, protiens and vitamins. So, pick and combine different dishes,  so that you are including all these components in just a couple of dishes. Then you do not need to make elaborate or  multiple dishes to accomplish that. I will be putting together a list of various menus that you can use as a quick reference. Coming soon - watch out for it.

Tip 6: This is probably the most useful tip - use a pressure cooker. Pressure cookers are absolutely wonderful devices. They reduce cooking time is drastically. So if it's a recipe where there is a possibility, then do it. You will note how much time it helps you save. This is very noticable when you are cooking any kinds of beans, lentils or rice.

Finally here is the recipe I promised. This drink is the perfect accompaniment to any celebratory dinner.

Creamy Citrus Mocktail
1 cup orange juice
juice of 1 lemon
2-3 tbsp simple syrup
club soda
vanilla icecream
lemon slices


Method
Mix together the orange juice, lemon and the simple syrup. Taste it to adjust the sweetness. Add more syrup if needed. When you are ready to serve it, pour the syrup and juice mixture into the glasses. Top it with some club soda (about 1/4 cup per glass) to create the fizz and then add a scoop of vanilla icecream to the drink. Garnish the glass with a slice of lemon.

Tips
To make simple syrup, heat 1 cup of water and dissolve one cup of sugar in it. Turn off the heat once the sugar is dissolved and let it cool. Simple syrup is ready.
